  • 8 oz fresh cremini or button mushrooms, sliced
  • 1 cup freshly grated Asiago cheese
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 cup low-sodium chicken broth
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear chicken for about 6-7 minutes on each side until golden brown. Remove from skillet.
  2. In the same skillet, add more olive oil if needed and sauté minced garlic for about a minute. Add sliced mushrooms and cook until tender.
  3. Pour in chicken broth while scraping up browned bits from the skillet. Bring to a simmer, then stir in heavy cream and thyme.
  4. Add grated Asiago cheese to the sauce, stirring until melted and smooth. Return the chicken to the skillet, allowing it to absorb the flavors.
  5. Simmer for an additional five minutes on low heat before serving.
