  • 1 medium onion, diced
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • 2 tbsp low-sodium soy sauce
  • ½ tsp black pepper
  • Salt to taste
  • 1 tbsp olive oil (for searing)

Instructions

  1. Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper on both sides.
  3. Heat olive oil in a large skillet over medium-high heat. Sear chicken for about 5 minutes on each side until golden brown, then remove from skillet.
  4. In the same skillet, sauté diced onion and minced garlic for 2-3 minutes until translucent. Stir in soy sauce, chicken broth, heavy cream, thyme, and black pepper.
  5. Return seared chicken to the skillet, spooning sauce over each piece.
