Creamy Tuscan Chicken Orzo is a delightful one-pot dish that combines tender chicken, creamy sauce, and flavorful orzo pasta.   • 1 lb boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 4 cloves fresh garlic, minced
  • 1 cup sun-dried tomatoes (packed in oil), chopped
  • 4 cups chicken broth (low-sodium)
  • 1 cup orzo pasta
  • 1 cup heavy cream
  • 1 cup fresh spinach
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper. Cook each side for 6-7 minutes until golden brown and cooked through. Remove and set aside.
  2. In the same skillet, sauté minced garlic and sun-dried tomatoes for about 1 minute until fragrant.
  3. Pour in chicken broth and bring to a boil. Stir in orzo pasta, reduce heat to low, cover, and simmer for 10-12 minutes until al dente.
  4. Lower heat further, add heavy cream, Parmesan cheese, and spinach. Stir gently until well combined.
  5. Return the cooked chicken to the skillet on top of the orzo mixture for another minute to warm up.
  6. Serve warm with extra Parmesan cheese if desired.
