  • 2 salmon fillets (6 oz each)
  • 2 tbsp olive oil
  • 2 cloves fresh garlic, minced
  • 1/3 cup oil-packed sun-dried tomatoes, chopped
  • 1/2 cup heavy cream
  • 1 cup fresh baby spinach
  • 1/4 cup grated Parmesan cheese
  • 1 tsp dried Italian herbs (basil, oregano, thyme)
  • Salt and pepper to taste

Instructions

  1. Pat the salmon fillets dry and season both sides with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Cook salmon skin-side down for 4-5 minutes until golden brown; flip and cook for an additional 3-4 minutes. Remove from skillet and set aside.
  2. In the same skillet, reduce heat to medium and sauté minced garlic until fragrant (about 30 seconds). Add sun-dried tomatoes; stir to combine.
  3. Pour in heavy cream while scraping up browned bits from the skillet. Simmer for about two minutes until slightly thickened. Stir in grated Parmesan cheese and dried herbs.
  4. Gradually fold in spinach, stirring until wilted. Return salmon to the skillet, spoon sauce over each fillet, and warm through for an additional minute.
  5. Serve immediately with extra sauce drizzled on top.
