  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 cup sun-dried tomatoes packed in oil
  • 2 cups fresh baby spinach
  • 8 oz cream cheese, softened
  • 2 cups low-sodium chicken broth
  • 8 oz pasta (your choice), cooked al dente

Instructions

  1. Place the chicken breasts at the bottom of the crock pot. Season with salt and pepper.
  2. Sprinkle minced garlic and sun-dried tomatoes over the chicken. Pour in the chicken broth.
  3. Add softened cream cheese on top of the mixture.
  4. Cook on low for 6 hours until chicken is tender.
  5. About 30 minutes before serving, stir in fresh spinach until wilted.
  6. Cook pasta separately according to package instructions; drain and mix into the crock pot before serving.
