  • 1 lb boneless, skinless chicken thighs
  • 1 cup white rice (long-grain or jasmine)
  • 3 cloves fresh garlic, minced
  • 1-inch piece fresh ginger, grated
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 2 cups water
  • Oil for cooking

Instructions

  1. Rinse the rice under cold water until clear; set aside.
  2. In a pot, combine rinsed rice and water. Bring to a boil, then reduce heat to low and cover for 15 minutes. Let sit covered for an additional 5 minutes.
  3. Chop the chicken into bite-sized pieces. Mix soy sauce, honey, garlic, ginger, and rice vinegar in a bowl. Marinate chicken for at least 10 minutes.
  4. Heat oil in a skillet over medium-high heat. Add marinated chicken along with the marinade and cook for 7-10 minutes until browned and cooked through.
  5. Reduce heat to low and let sauce thicken slightly for about 3 minutes.
  6. Serve warm rice topped with sticky chicken and extra sauce if desired.
