  • 8 oz wide rice noodles
  • 1 cup boneless chicken breast or tofu, sliced
  • 1 cup mixed bell peppers (red and green), sliced
  • 1 cup fresh basil leaves
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp oyster sauce (or vegetarian alternative)
  • 2 tbsp chili paste or fresh chilies (adjust to taste)
  • 1 tbsp brown sugar
  • 2 tbsp vegetable oil

Instructions

  1. Soak the wide rice noodles in warm water until soft but not mushy. Drain and set aside.
  2. In a large skillet or wok, heat vegetable oil over medium-high heat. Stir-fry the chicken or tofu until golden brown, then remove from the pan.
  3. Add the bell peppers to the same skillet and sauté for about two minutes until tender-crisp.
  4. Return the cooked protein to the skillet with the soaked noodles. Stir in soy sauce, oyster sauce, chili paste, and brown sugar until everything is well coated.
  5. Just before serving, toss in fresh basil leaves and give it a quick stir.
