  • 1 cup graham cracker crumbs
  • 4 tbsp unsalted butter, melted
  • 1/4 cup granulated sugar
  • 12 oz cream cheese, softened
  • 1/2 cup sour cream
  • 2 large eggs
  • 2 cups fresh apples, peeled and diced (preferably Granny Smith or Honeycrisp)
  • 1 tsp ground cinnamon

Instructions

  1. Preheat your oven to 325°F (160°C) and line a muffin tin with paper liners.
  2. In a bowl, mix graham cracker crumbs, melted butter, and 2 tbsp sugar until combined. Press about one tablespoon into each muffin liner.
  3. In another bowl, beat cream cheese and remaining sugar until smooth. Add sour cream and eggs, mixing until fully combined.
  4. Spoon two tablespoons of the filling over each crust in the muffin tin.
  5. Toss diced apples with cinnamon and sprinkle over the cheesecake layer.
  6. Bake for 20-25 minutes until set around the edges; cool completely before refrigerating for at least an hour.
