  • 12 jumbo pasta shells
  • 1 cup ricotta cheese
  • 1 cup fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 2 cloves garlic, minced
  • 1 tsp dried Italian herbs (oregano, basil, thyme)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and spread a layer of marinara sauce in a baking dish.
  2. Boil salted water and cook jumbo shells until al dente; drain and set aside.
  3. In a skillet, sauté minced garlic in olive oil until fragrant. In a bowl, mix ricotta, spinach, Parmesan, dried herbs, salt, and pepper.
  4. Stuff each shell with the ricotta mixture and place them in the baking dish over marinara sauce.
  5. Pour remaining marinara sauce over the shells and sprinkle with extra Parmesan.
  6. Cover with foil and bake for 25 minutes; uncover for the last 10 minutes until bubbly.
