  • 1 cup fresh pineapple chunks (about 150g)
  • 1 cup granulated sugar (200g)
  • Zest of 1 orange
  • 1 tsp ground cinnamon
  • 2 tbsp freshly squeezed lemon juice

  1. Rinse cranberries under cold water, discarding any damaged ones. If using whole pineapple, chop into bite-sized pieces.
  2. In a medium saucepan over medium heat, combine cranberries, pineapple, sugar, orange zest, cinnamon, and lemon juice. Stir to mix well.
  3. Cook for 10-15 minutes until cranberries burst and juices are released, stirring occasionally.
  4. Remove from heat and allow to cool for about 30 minutes at room temperature.
