  • 4 cups stale bread (sourdough and whole grain)
  • 1 cup low-sodium vegetable broth
  • 1 cup finely diced celery
  • 1 cup sweet onion, diced
  • 1/4 cup fresh sage, chopped
  • 1/4 cup fresh thyme, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 large eggs
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
  2. Cut stale bread into cubes and toast on a baking sheet for about 10 minutes until golden.
  3. In a skillet, melt butter over medium heat. Sauté the celery and onion until soft (about 5 minutes), then add herbs for the last minute.
  4. In a large bowl, combine toasted bread cubes, sautéed vegetables, vegetable broth, melted butter, and eggs. Mix thoroughly.
  5. Spoon the mixture into the muffin tin, filling each cup three-quarters full.
  6. Bake for 25-30 minutes until golden brown on top. Let cool slightly before serving.
