  • 1 lb ground beef (or turkey)
  • ½ cup panko breadcrumbs
  • 3 green onions, chopped
  • 2 garlic cloves, minced
  • 1 cup shredded carrots
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • ½ cup Korean BBQ sauce
  • 2 tbsp soy sauce
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, panko breadcrumbs, garlic, green onions, carrots, soy sauce, salt, and pepper. Mix until well incorporated.
  3. Shape the mixture into small meatballs (about 1 inch in diameter) and place on the baking sheet.
  4. Bake for 20-25 minutes or until cooked through (internal temperature of 160°F/70°C).
  5. While baking, sauté bell peppers and zucchini in a skillet over medium heat for about 5-7 minutes.
  6. Once meatballs are done, add them to the skillet along with Korean BBQ sauce; toss gently to coat.
