  • 4 medium russet potatoes, peeled and diced (about 1.5 lbs)
  • 1 cup sharp cheddar cheese, shredded
  • 6 slices bacon, cooked and crumbled
  • 1 cup heavy cream
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • ½ cup sour cream
  • ¼ cup fresh chives, chopped

Instructions

  1. Prepare the ingredients by peeling and dicing the potatoes. Chop the onion and mince the garlic. Cook bacon until crispy and crumble.
  2. In a large pot over medium heat, sauté onions in bacon oil until translucent. Add minced garlic and cook for another minute.
  3. Add diced potatoes and chicken broth to the pot. Bring to a boil, then reduce heat and simmer uncovered for about 20 minutes or until potatoes are tender.
