  • 1 cup fresh spinach, chopped
  • 4 oz feta cheese, crumbled
  • 1 sheet puff pastry (thawed)
  • 2 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, add 1 tbsp olive oil. Once hot, sauté the minced garlic until fragrant. Add the spinach and cook until wilted (about 3-4 minutes). Remove from heat and let cool slightly.
  3. In a bowl, combine sautéed spinach with crumbled feta cheese. Season with salt and pepper.
  4. Roll out the thawed puff pastry on a lightly floured surface to about 1/8 inch thick. Cut into squares.
  5. Place a spoonful of the spinach-feta mixture into the center of each square. Fold diagonally and seal edges with a fork.
  6. Brush each crisp with remaining olive oil. Bake for 20-25 minutes or until golden brown.
