  • 8 oz spaghetti
  • 1 lb lean ground beef
  • 1 packet taco seasoning (about 1 oz)
  • 1 can (15 oz) black beans, rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups shredded cheddar cheese
  • 1 cup bell peppers, chopped
  • 1 cup tomato sauce

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a large baking dish with nonstick spray.
  2. Cook the spaghetti in salted boiling water until al dente according to package instructions; drain and set aside.
  3. In a skillet over medium heat, brown the ground beef until cooked through. Drain excess fat if needed. Stir in taco seasoning, black beans, diced tomatoes, and bell peppers; cook until heated through.
  4. In a large bowl, combine the cooked spaghetti with the meat mixture and add half of the cheddar cheese and tomato sauce; stir well.
  5. Transfer half of the spaghetti mixture into the baking dish, sprinkle with remaining cheese, then layer the rest of the spaghetti mixture on top.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly.
