  • 2 lbs beef chuck roast
  • 4 dried guajillo chiles
  • 1 medium onion, chopped
  • 4 garlic cloves
  • 1 cup low-sodium chicken broth (plus extra for cooking)
  • 1/2 cup fresh cilantro, chopped
  • 8 corn tortillas
  • Lime wedges for serving

Instructions

  1. Prepare the Chiles: Remove stems and seeds from guajillo chiles. Toast in a dry skillet over medium heat for 1-2 minutes until fragrant. Soak in hot water for 15 minutes.
  2. Blend the Marinade: Combine soaked chiles, onion, garlic, and 1 cup chicken broth in a blender. Blend until smooth.
  3. Marinate the Meat: Place beef in a bowl or resealable bag. Pour marinade over it and coat well. Refrigerate for at least 2 hours or overnight.
  4. Cook the Beef: Transfer marinated beef to a slow cooker or Dutch oven. Add remaining chicken broth and cook on low for about 6 hours until tender.
