  • 1 lb beef sirloin, sliced thin
  • 1/4 cup pure honey
  • 2 cloves fresh garlic, minced
  • 1 lb Yukon Gold potatoes, chopped into bite-sized pieces
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp olive oil
  • 2 tbsp rice vinegar
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C) and prepare a large rimmed baking sheet with nonstick spray.
  2. In a bowl, toss chopped potatoes with olive oil, salt, and black pepper. Spread on one side of the baking sheet.
  3. Roast potatoes for about 25 minutes until golden brown.
  4. While potatoes roast, mix sliced beef with honey, soy sauce, garlic, and rice vinegar in another bowl.
  5. After roasting potatoes for 25 minutes, add marinated beef to the baking sheet alongside the potatoes. Drizzle any remaining marinade over both.
  6. Return to oven for an additional 10-15 minutes until beef is cooked through and caramelized, stirring halfway.
