Pomegranate-Glazed Christmas Ribs are the perfect centerpiece for your holiday feast. These tender pork ribs are coated in a luscious sweet-tart glaze made from pomegranate juice, brown sugar, and balsamic vinegar.   • 2 lbs pork ribs (baby back or spare)
  • 1 cup pomegranate juice (freshly squeezed or bottled)
  • 1/3 cup brown sugar
  • 1 tsp garlic powder
  • 1/2 tsp red pepper flakes (adjust for spice preference)
  • 2 tbsp soy sauce (low-sodium recommended)
  • Salt and pepper to taste
  • 2 tbsp balsamic vinegar

Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with aluminum foil.
  2. Pat the pork ribs dry with paper towels and season both sides generously with salt and pepper.
  3. In a medium saucepan over medium heat, combine the pomegranate juice, brown sugar, garlic powder, red pepper flakes, soy sauce, and balsamic vinegar. Stir until sugar dissolves and bring to a simmer for about 10 minutes until slightly thickened.
  4. Place the seasoned ribs on the prepared baking sheet. Brush half of the glaze over them, cover tightly with foil, and bake for about 2 hours.
  5. After 2 hours, remove the foil and brush more glaze over the ribs. Increase the oven temperature to 400°F (200°C) and bake uncovered for an additional 30 minutes to caramelize the glaze.
  6. Let rest for 5 minutes before slicing between bones and serving with remaining glaze drizzled on top.
