  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/4 cup chopped walnuts (optional)
  • 8 oz cream cheese, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together flour, baking soda, cinnamon, and salt.
  3. In another bowl, combine pumpkin puree, eggs, granulated sugar, brown sugar, vanilla extract, and melted butter until smooth.
  4. Gradually mix dry ingredients into wet ingredients until just combined.
  5. In a separate bowl, beat cream cheese until smooth; add one egg yolk and a tablespoon of sugar.
  6. Pour half of the pumpkin batter into the loaf pan; add dollops of cream cheese mixture; top with remaining batter and swirl gently.
  7. Bake for about 60 minutes or until a toothpick inserted comes out clean.
