Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or spray with nonstick cooking spray.
  2. In a large bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, combine the pumpkin puree, sugar, eggs, vegetable oil, and vanilla extract until smooth.
  4. Gradually mix the dry ingredients into the wet mixture until just combined—do not overmix.
  5. In a small bowl, beat together the cream cheese, powdered sugar, and vanilla until smooth.
  6. Fill each muffin cup halfway with batter. Add one tablespoon of cream cheese mixture on top and cover with more batter. Use a toothpick to swirl gently.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean. Let cool slightly before serving.
