  • 2 acorn squashes, halved
  • 4 oz brie cheese, sliced
  • 1 cup fresh cranberries
  • 2 tbsp extra virgin olive oil
  • 1 tbsp honey
  • 2 tsp fresh thyme leaves

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Halve the acorn squashes and scoop out the seeds. Brush each half with olive oil and season with salt and pepper.
  3. Place squash cut-side down on the baking sheet and roast for 25-30 minutes until tender.
  4. Flip the squash over, fill with brie slices, scatter cranberries on top, and drizzle honey.
