  • 2 cups low-sodium vegetable broth
  • 1 medium yellow onion, diced

  • 2 tbsp butter
  • ½ cup toasted pine nuts
  • 2 tsp fresh thyme, chopped
  • 2 tsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Rinse wild rice under cold water until clear. In a medium saucepan, combine with vegetable broth. Bring to a boil, reduce heat, cover, and simmer for about 45 minutes until tender.
  2. In a large skillet over medium heat, melt butter. Add diced onion and chopped celery; cook for about 5 minutes until softened. Stir in minced garlic and cook for an additional minute.
  3. Add sliced mushrooms to the skillet; cook until golden brown, about 8 minutes. Season with salt, pepper, thyme, and parsley.
  4. Once the wild rice is cooked, add it to the skillet along with toasted pine nuts. Mix thoroughly.
  5. Preheat oven to 350°F (175°C). Transfer the mixture to a greased baking dish; cover with foil and bake for about 25 minutes.
  6. Serve warm garnished with additional herbs if desired.
