  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1/2 cup balsamic vinegar
  • 3 tbsp honey
  • 2 tbsp extra virgin olive oil
  • 2 bell peppers, sliced (any color)
  • 2 medium zucchini, sliced into half-moons
  • 1 red onion, cut into wedges
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper.
  2. In a bowl, whisk together balsamic vinegar, honey, minced garlic, and olive oil. Place chicken breasts on the sheet pan and brush with the mixture.
  3. Arrange the bell peppers, zucchini, and red onion around the chicken. Drizzle veggies with olive oil and season with salt and pepper.
  4. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and veggies are tender.
  5. Brush more balsamic glaze over everything and broil on high for an additional 3-5 minutes until caramelized.
  6. Serve directly from the pan or transfer to plates.
