  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 medium zucchinis, chopped
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 3 tbsp extra virgin olive oil
  • 4 cloves fresh garlic, minced
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
  2. In a bowl, whisk together olive oil, minced garlic, lemon juice, oregano, salt, and pepper to create the marinade.
  3. Place chicken breasts in a resealable bag or bowl and pour half of the marinade over them. Seal or cover and marinate in the fridge for at least 30 minutes.
  4. Chop the zucchinis and bell peppers into bite-sized pieces. Toss them with the remaining marinade in another bowl.
  5. Arrange the marinated chicken on one side of the sheet pan and spread the vegetables around it.
  6. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and vegetables are tender.
