  • 2 medium zucchinis, spiralized into noodles
  • 4 cloves fresh garlic, minced
  • 2 tbsp extra virgin olive oil
  • 2 tbsp unsalted butter
  • 1/2 cup dry white wine (like Sauvignon Blanc)
  • Juice of 1 lemon (about 2 tbsp)
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Prepare the zucchini noodles using a spiralizer or vegetable peeler. Set aside on paper towels to absorb moisture.
  2. In a large skillet over medium heat, combine olive oil and butter. Once melted, add garlic and sauté until fragrant.
  3. Add shrimp to the skillet and cook until pink and opaque, about 3-4 minutes.
  4. Deglaze with white wine, scraping up browned bits from the skillet. Simmer for about 2 minutes until slightly reduced.
  5. Stir in lemon juice and zucchini noodles; toss gently for 2-3 minutes until just tender.
  6. Season with salt and pepper to taste, garnish with parsley, then serve.
