  • 3 medium ripe bananas (about 1 cup mashed)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 ½ cups all-purpose flour
  • For topping: 2 tbsp granulated sugar and 1 tsp ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mash the bananas until smooth.
  3. In another bowl, cream butter with granulated and brown sugar until fluffy.
  4. Mix in eggs one at a time, then add mashed bananas and vanilla extract if desired.
  5. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt. Gradually mix into the wet ingredients until just combined.
  6. Pour batter into the loaf pan and sprinkle the cinnamon-sugar topping over it.
  7. Bake for 50–60 minutes or until a toothpick inserted comes out clean.
