  • 4 cloves fresh garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 cups broccoli florets
  • 2 medium carrots, thinly sliced
  • 3 tbsp low-sodium soy sauce
  • 1 tsp red pepper flakes (adjust to taste)
  • 1 tsp sesame oil
  • 2 tbsp vegetable oil (for cooking)
  • Cooked rice (to serve)

Instructions

  1. Prepare your ingredients by washing and chopping vegetables into bite-sized pieces. Slice the chicken breasts thinly.
  2. Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of vegetable oil and heat it up. Season the chicken strips with salt and pepper and cook for about 5-7 minutes until golden brown. Remove from the pan.
  3. In the same skillet, add another tablespoon of oil if needed. Add minced garlic, bell peppers, broccoli florets, and carrots; stir-fry for 3-4 minutes until tender yet crisp.
  4. In a small bowl, mix soy sauce, red pepper flakes, and sesame oil; pour over vegetables in the skillet.
  5. Return cooked chicken to the skillet and toss everything until well coated in sauce. Heat through for an additional minute.
  6. Serve hot over freshly cooked rice.
