  • 3 cups fresh spinach
  • 1/2 cup crumbled feta cheese
  • 4 large flour tortillas
  • 2 tablespoons olive oil (divided)
  • 2 cloves garlic (minced)
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, add 1 tablespoon of olive oil and sauté minced garlic for about 1 minute. Add spinach and cook until wilted (3-4 minutes). Remove from heat and let cool slightly.
  2. In a bowl, mix the sautéed spinach with crumbled feta cheese. Season with salt and pepper.
  3. Heat the remaining tablespoon of olive oil in the skillet. Place one tortilla in the skillet, spoon half of the spinach-feta mixture onto one half of the tortilla, and fold it over.
  4. Cook for 3-4 minutes on each side or until golden brown and crispy. Repeat with remaining tortillas.
  5. Cut into wedges, serve warm with your favorite dipping sauce.
