  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 4 cloves fresh garlic, minced
  • 1 inch fresh ginger, grated
  • 2 red or yellow bell peppers, thinly sliced
  • 2 cups fresh broccoli florets
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup honey (or maple syrup)
  • 1 tbsp sesame oil
  • 2 cups cooked rice or quinoa

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Season chicken breasts with salt and pepper and place them on the sheet.
  2. In a bowl, whisk together soy sauce, honey, minced garlic, grated ginger, and sesame oil.
  3. Pour half of the sauce over the chicken and reserve the rest.
  4. Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C), basting halfway through.
  5. While the chicken bakes, sauté bell peppers and broccoli in a pan with oil for about 5-7 minutes until tender-crisp.
  6. Slice the baked chicken and assemble bowls by layering rice/quinoa at the bottom, followed by vegetables and sliced chicken. Drizzle remaining sauce over each bowl.
