  • 1 ½ cups crushed graham crackers
  • ⅓ cup unsalted butter, melted
  • ⅓ cup granulated sugar
  • 16 oz cream cheese, softened
  • ⅔ cup granulated sugar
  • ½ cup sour cream
  • 1 tsp pure vanilla extract
  • 1 ½ cups fresh strawberries, pureed
  • 1 cup heavy cream (for topping)

Instructions

  1. Preheat the oven to 325°F (163°C). Mix crushed graham crackers, melted butter, and sugar in a bowl. Press into the bottom of a springform pan.
  2. In another bowl, beat softened cream cheese until smooth; gradually add sugar, then mix in sour cream and vanilla until combined.
  3. Puree fresh strawberries until smooth, then fold some puree into half of the cheesecake mixture.
  4. Pour half of the unflavored mixture over the crust; dollop with strawberry puree and swirl gently. Add remaining mixture and repeat with more puree.
  5. Bake for 50-60 minutes until edges are set but center jiggles slightly. Turn off the oven and leave the cheesecake inside for an hour.
  6. Cool at room temperature before refrigerating for at least four hours or overnight.
  7. Serve chilled with whipped cream on top.
