  • 1 lb lean ground beef (80/20)
  • 1 cup fresh Thai basil leaves, chopped
  • 8 rice paper wrappers
  • 1 medium carrot, grated
  • 1 small cucumber, thinly sliced
  • 2 tbsp hoisin sauce
  • 2 tbsp low-sodium soy sauce

Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked, breaking it into small pieces. Drain excess fat.
  2. Stir in chopped Thai basil, grated carrot, and cucumber slices until well combined.
  3. Soak one rice paper wrapper in warm water until soft. Lay it flat on a clean surface.
  4. Place a spoonful of the beef mixture at one edge of the wrapper. Fold in sides and roll tightly towards the empty edge.
  5. In a small bowl, mix hoisin and soy sauce for dipping.
  6. Arrange the rolls on a platter and serve with dipping sauce.
