  • 1 cup short-grain sushi rice
  • 2 sheets nori
  • 4 oz sashimi-grade tuna or salmon
  • 1 ripe avocado
  • ½ cucumber
  • 2 tbsp mayonnaise
  • 1 tbsp sriracha
  • 2 tbsp eel sauce

Instructions

  1. Rinse sushi rice under cold water until clear, then cook with a ratio of 1 cup rice to 1.25 cups water. Let cool before mixing with 1 tbsp rice vinegar, sugar, and salt.
  2. Slice fish into thin strips and julienne cucumber. Halve avocado, remove pit, scoop out flesh, and slice thinly.
  3. On a bamboo mat, lay nori shiny side down and spread an even layer of sushi rice, leaving an inch at the top.
  4. Add fish, cucumber, and avocado in the center without overfilling.
  5. Roll tightly using the mat while applying gentle pressure until sealed.
  6. Cut into six pieces with a wet knife, drizzling spicy mayo and eel sauce over each piece.
