  • 2 cups low-sodium vegetable broth
  • 1 cup sliced mushrooms (cremini or button)
  • 1/2 cup slivered almonds (toasted)
  • 1 medium yellow onion (diced)
  • 2 cloves garlic (minced)
  • 2 tbsp olive oil
  • 1 tsp fresh thyme (chopped)
  • 1 tbsp fresh parsley (chopped)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish.
  2. In a saucepan, combine wild rice and vegetable broth; bring to a boil, then reduce heat and simmer for 45 minutes until tender.
  3. In a skillet, heat olive oil over medium heat. Sauté diced onion until translucent (about 5 minutes). Add minced garlic and sliced mushrooms; cook until mushrooms soften (5-7 minutes).
  4. In a large bowl, mix cooked wild rice with the sautéed vegetables, toasted almonds, thyme, and parsley. Season with salt and pepper.
  5. Transfer the mixture to the baking dish, cover with foil, and bake for 25 minutes. Remove foil during the last 5 minutes for a crispy top.
