  • 1 lb large shrimp (peeled and deveined)
  • 6 slices thick-cut bacon
  • 2 medium Yukon Gold or Russet potatoes (about 1 lb total)
  • 1 cup shredded sharp cheddar cheese
  • ½ cup sour cream
  • ¼ cup green onions (chopped)
  • 2 tsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and cut the potatoes into bite-sized pieces, then toss with olive oil, garlic powder, paprika, salt, and pepper. Spread on the baking sheet and bake for 25-30 minutes until golden brown and tender.
  3. While the potatoes bake, cook the bacon in a skillet over medium heat until crispy. Remove from the skillet, crumble, and set aside.
  4. In the same skillet, sauté shrimp over medium heat until pink and opaque (3-4 minutes). Season with salt and pepper.
  5. Combine baked potatoes with shrimp and crumbled bacon on a platter, top with cheddar cheese, return to oven for an additional 5 minutes until cheese melts. Serve topped with sour cream and green onions.
