  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 ripe pineapple (about 2 cups chopped)
  • 1 red bell pepper (diced)
  • 1 green bell pepper (diced)
  • 1 medium yellow onion (chopped)
  • 3 cloves garlic (minced)
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp cooking oil
  • Salt and pepper to taste

Instructions

  1. Cut the chicken breasts into bite-sized pieces and season with salt and pepper.
  2. Heat cooking oil in a large skillet over medium heat. Add chicken and cook until browned and fully cooked through, about 7-10 minutes. Remove from skillet.
  3. In the same skillet, sauté onions until translucent. Add bell peppers and cook for another 5 minutes.
  4. Stir in pineapple chunks and minced garlic; cook until fragrant, about 5 minutes.
  5. Mix soy sauce and brown sugar in a small bowl, then pour over the sautéed mixture in the skillet.
  6. Return the chicken to the skillet, stir to combine, and simmer for an additional 2 minutes before serving.
