  • 8 oz udon noodles
  • 8 oz beef sirloin, thinly sliced
  • 2 tbsp soy sauce (low sodium)
  • 1 tsp cornstarch
  • 1 tsp freshly cracked black pepper (plus more to taste)
  • 2 tbsp vegetable oil
  • 1 medium onion, sliced
  • 3 cloves garlic, minced

Instructions

  1. Boil a pot of water and cook the udon noodles according to package instructions (about 3-4 minutes). Drain and set aside.
  2. In a bowl, marinate sliced beef with soy sauce, cornstarch, and half of the black pepper for 15 minutes.
  3. Heat vegetable oil in a skillet over medium-high heat. Sear marinated beef in batches for 2-3 minutes until browned; remove from skillet.
  4. In the same skillet, add onions and garlic. Sauté until translucent (about 3 minutes).
  5. Return beef to the skillet with cooked udon noodles. Add remaining soy sauce and black pepper; toss gently until heated through.
