  • 2 lbs chuck roast, cut into cubes
  • 2 medium yellow onions, chopped
  • 4 cloves garlic, minced
  • 1 cup bell peppers (red or green), sliced
  • 2 medium carrots, sliced
  • 4 cups low-sodium beef broth
  • 2 tbsp smoked paprika
  • 2 bay leaves
  • 1 cup sour cream

Instructions

  1. In a large pot over medium-high heat, brown the cubed chuck roast in oil for about 5-7 minutes. Remove and set aside.
  2. In the same pot, sauté chopped onions and minced garlic until translucent (3-4 minutes). Add sliced bell peppers and carrots; cook until slightly softened.
  3. Stir in smoked paprika and bay leaves; cook for another minute to release flavors.
  4. Return browned meat to the pot with beef broth. Bring to a gentle boil, then reduce heat to low and simmer covered for 1 hour.
  5. After an hour, check consistency; add more broth if needed. Simmer uncovered for an additional 30 minutes until thickened.
  6. Stir in sour cream just before serving and adjust seasoning as needed.
