  • 2 small sugar pumpkins
  • 1 lb ground Italian sausage
  • 1 cup pizza sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup chopped bell peppers (any color)
  • 1 tsp Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C). Cut the tops off the pumpkins and scoop out the seeds.
  2. In a skillet over medium heat, brown the ground Italian sausage. Drain excess fat.
  3. Add chopped bell peppers and cook until softened.
  4. Stir in pizza sauce and half of the mozzarella cheese until well combined.
  5. Stuff each pumpkin with the mixture, pressing down gently, then top with remaining mozzarella.
  6. Place on a baking sheet and bake for 25-30 minutes until pumpkins are tender.
