  • 4 small sugar pumpkins (about 2 pounds each)
  • 1 lb lean ground turkey
  • 4 tbsp unsalted butter
  • 1/4 cup fresh sage leaves, chopped
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup breadcrumbs (plain or seasoned)
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Olive oil for brushing

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Wash and cut the tops off the pumpkins, scoop out seeds and stringy insides, brush with olive oil, and sprinkle with salt.
  3. In a skillet, melt butter over medium heat until golden brown, then sauté onions and garlic until softened.
  4. Add ground turkey to the skillet; cook until browned. Stir in chopped sage, seasoning with salt and pepper.
  5. Remove from heat; mix in breadcrumbs and Parmesan cheese until combined.
  6. Stuff each pumpkin generously with the turkey mixture, replace tops, and place on the prepared baking sheet.
  7. Bake for 30-35 minutes or until pumpkins are tender when pierced with a fork.
