  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 cup fresh cilantro leaves
  • 2 tbsp freshly squeezed lime juice
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 1 jalapeño pepper, seeded and chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray.
  2. Season the chicken breasts generously with salt and pepper on both sides and place them in the prepared baking dish.
  3. Bake for 25-30 minutes until the internal temperature reaches 165°F (75°C). Let rest for a few minutes after removing from the oven.
  4. In a blender or food processor, combine cilantro, garlic, jalapeño, lime juice, mayonnaise, sour cream, and olive oil. Blend until smooth.
  5. Taste the sauce and adjust seasoning if necessary. Slice the baked chicken and drizzle generously with the green sauce before serving.
