  • 1 lb large deveined shrimp
  • 1 cup sushi rice
  • 1 ¼ cups water
  • 2 sheets nori (seaweed)
  • 1 medium cucumber, thinly sliced
  • 1 ripe avocado, sliced
  • 3 tbsp mayonnaise (preferably Japanese)
  • 2 tbsp Sriracha sauce (adjust for spice preference)
  • 1 tbsp rice vinegar
  • Salt and pepper to taste
  • 1 tsp cooking oil

Instructions

  1. Rinse sushi rice under cold water until clear. Combine with water in a saucepan, bring to boil, then reduce heat. Cover and cook for about 18 minutes until tender.
  2. In a skillet over medium-high heat, add oil and sauté shrimp seasoned with salt and pepper for 3–4 minutes until pink and opaque. Let cool slightly.
  3. Mix mayonnaise, Sriracha, and rice vinegar in a bowl; set aside.
  4. On nori sheets cut into squares, layer sushi rice, cucumber slices, avocado, and shrimp. Drizzle with spicy sauce.
  5. Roll tightly and gently press to maintain shape; repeat with remaining ingredients.
  6. Serve on plates drizzled with any leftover sauce.
