Ingredients

Scale
  • 4 cups cubed cornbread (stale)
  • 1 cup low-sodium vegetable broth
  • 1 medium onion, finely chopped
  • 2 stalks celery, diced
  • 1/4 cup chopped fresh sage
  • 1/4 cup chopped fresh thyme
  • 1/2 cup chopped pecans or walnuts (toasted)
  • 1/2 cup dried cranberries or raisins

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a large baking dish.
  2. If using homemade cornbread, cube it into bite-sized pieces and toast in the oven for about 10 minutes until slightly crisp.
  3. In a skillet over medium heat, melt two tablespoons of butter and sauté the onions and celery until softened, about five minutes.
  4. In a large bowl, combine toasted cornbread cubes with sautéed vegetables, herbs, nuts, and dried fruit. Gradually add vegetable broth until moistened but not soggy.
  5. Transfer the mixture to the prepared baking dish. Cover with foil and bake for 30 minutes; remove foil during the last ten minutes to achieve a golden top.
