  • 1 lb lean ground beef
  • 1 packet taco seasoning
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 can (15 oz) black beans, rinsed and drained
  • 2 cups shredded cheddar cheese
  • 5 cups crushed Doritos (about half a bag)
  • sour cream (optional)
  • sliced green onions (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a large baking dish.
  2. In a skillet over medium heat, brown the ground beef. Drain excess fat and stir in taco seasoning.
  3. Add diced tomatoes and black beans to the skillet, mixing well. Simmer for 5 minutes.
  4. Layer half of the crushed Doritos in the baking dish. Spoon half of the beef mixture over them and sprinkle with half of the cheese. Repeat layers.
  5. Bake for 20-25 minutes until cheese is bubbly and golden.
  6. Let cool for 5 minutes before serving with sour cream and green onions.
