  • 3 large yellow onions, sliced
  • 4 cups low-sodium beef broth
  • 2 tsp olive oil
  • 1 tbsp fresh thyme, chopped
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Season both sides of the beef chuck roast generously with salt and pepper.
  3. In a large skillet, heat olive oil over medium-high heat. Sear the roast on all sides until browned (about 3-4 minutes per side).
  4. Add sliced onions to the skillet and cook over medium heat until golden brown and soft (about 15–20 minutes).
  5. Transfer the caramelized onions to a Dutch oven or slow cooker. Place the seared roast on top, adding beef broth, thyme, bay leaves, and additional seasoning.
  6. Cover and slow cook in the oven for about 3-4 hours or until fork-tender. If using a slow cooker, set it on low for approximately 6–8 hours.
