  • 1/2 cup cornstarch
  • 1 cup buttermilk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • Vegetable oil for frying

  1. Marinate chicken pieces in buttermilk for at least one hour or overnight.
  2. In a bowl, mix flour, cornstarch, salt, black pepper, paprika, garlic powder, and cayenne until combined.
  3. Remove chicken from buttermilk, allowing excess to drip off. Dredge in the flour mixture until fully coated.
  4. Heat vegetable oil in a skillet to 350°F (175°C). Fry coated chicken pieces in batches for 12-15 minutes on each side until golden brown and cooked through (internal temperature of 165°F / 75°C).
  5. Transfer cooked chicken to paper towels to drain excess oil before serving.
