  • 1 lb large shrimp, deveined and peeled
  • 1 ripe avocado, sliced
  • 1 medium English cucumber, thinly sliced
  • 4 sheets nori
  • 2 tbsp olive oil
  • 2 tbsp Sriracha sauce (adjust to taste)
  • 2 tbsp Kewpie mayonnaise

Instructions

  1. Prepare the sushi rice by rinsing it under cold water until clear. Cook with 1.5 cups of water according to package instructions. Let it cool slightly.
  2. In a skillet over medium heat, add olive oil and cook shrimp seasoned with salt and pepper for about 3 minutes per side until pink. Remove from heat and let cool.
  3. In a bowl, mix Sriracha sauce and Kewpie mayonnaise until smooth.
  4. On a plate, layer nori sheets with sushi rice, avocado slices, cucumber, shrimp, and spicy mayo. Repeat layers until desired height is reached.
  5. Slice stacks using a wet knife to prevent sticking and serve with extra spicy mayo.
