  • ½ cup heavy cream (optional)
  • Salt and pepper to taste
  • Juice of half a lemon (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Sauté the chopped onion until translucent, about 5 minutes. Add minced garlic and sauté for an additional minute.
  2. Stir in the diced potatoes and pour in the vegetable broth. Bring to a simmer and cook until the potatoes are tender, approximately 10 minutes.
  3. Add the fresh spinach and let it wilt for about 3-4 minutes while stirring occasionally.
  4. Blend the soup using an immersion blender until smooth. If using a regular blender, allow it to cool slightly before blending in batches.
  5. Season with salt, pepper, and lemon juice if desired. For creaminess, stir in heavy cream before serving.
