  • 2 tbsp fresh thyme leaves
  • Zest and juice of 1 lemon
  • 1/2 cup breadcrumbs
  • 1 cup pumpkin puree (canned)
  • 1 cup orzo pasta
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix ground chicken or turkey, thyme, lemon zest, lemon juice, breadcrumbs, salt, and pepper until just combined.
  3. Form mixture into 1-inch meatballs and place on the baking sheet.
