  • 3 lbs corned beef brisket
  • 1 medium head green cabbage, chopped
  • 4 large carrots, peeled and chopped
  • 2 lbs Yukon Gold potatoes, quartered
  • 4 cups low-sodium beef broth
  • 2 tsp mustard seeds
  • 1 tsp black peppercorns

Instructions

  1. Rinse the corned beef brisket under cold water to remove excess salt. Place in a large pot and cover with water. Bring to a boil over medium heat.
  2. Once boiling, reduce heat to low and add mustard seeds, black peppercorns, and any spice packet included with the brisket. Cover and simmer for about 2 hours until tender.
  3. Add chopped cabbage, carrots, and potatoes to the pot. Stir gently to incorporate.
  4. Cover again and cook for an additional hour or until vegetables are fork-tender and brisket is very tender.
  5. Remove from heat, let rest for 10 minutes before slicing against the grain. Plate with vegetables, drizzling some broth over for extra flavor.
