  • 6 Hatch chiles
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 lb lean ground beef or turkey (optional)
  • 1/4 cup fresh cilantro or parsley, chopped

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Char the Hatch chiles over an open flame until blistered. Place in a plastic bag for 10 minutes to steam, then peel off skins.
  3. In a bowl, mix cream cheese, cheddar cheese, Monterey Jack cheese, and ground meat (if using) until well combined. Stir in fresh herbs.
  4. Slice charred chiles open lengthwise and remove seeds. Stuff each chile generously with the filling mixture.
  5. Arrange stuffed chiles on the baking sheet and bake for 20-25 minutes until heated through and golden on top.
